It was Thanksgiving Day 2016, my mother called me in a panic telling me that after a night's sleep my father is soiled, fallen out of his bed and unresponsive. She has called the ambulance to bring him to the hospital ER and for me to rush to the ER to meet her. At the ER, the resident doctor had no clue what had happened and couldn't give us any information as to what is happening to my father. After several hours, which felt like eternity, the doctor finally came to us and informed that our father has fallen into a diabetic coma, they are unable to get his blood sugar levels back to normal and he needs to be transferred to Mt. Sinai Hospital in New York City.
During his stay at Mt. Sinai, he was in the ICU for about a week to monitor his brain activity and then shortly after transferred to a nursing home closer to home. He continued to be in a coma for almost 1.5 years when then he passed away March 2018.
When my father fell into a diabetic coma, I started watching my own diet as Diabetes is more likely to be genetic. I started the Keto Diet but couldn't satisfy my cravings for sweets. I looked for keto-friendly recipes and thought if I am able to satisfy my own sweet tooth I can also do the same for other dietary needs. I started to tweek each recipe so it can be suitable for not only Keto Diet but also Diabetics and Celiacs. I did a lot of research into the different type of sugar substitutes, different types of flour alternatives, etc. and today I am able to share my treats with you and satisfy many more sweet tooths.
